Warmed Brie with Walnuts, dried figs and Fig balsamic

ZinPunk's balance of Jam, spice and earthy tannin plays off this simple and elegant recipe beautifully. It is another one of our favorites bringing a unique and exciting twist to your wine and cheese pairings. The fusion of creamy brie with the earthy tannins in the walnuts, and the deep fruit of the balsamic vinegar dances in delightful harmony with the flavors and aromas of ZinPunk.

Ingredients

  • 1 wedge Brie either double or triple cream
  • ¼ cup Chopped Whole Fresh Walnuts
  • ¼ cup Chopped Dates
  • Crickets and Tumbleweed (C&T) Blackberry Balsamic

Instructions

  • Cut the rind off of the top of the brie wedge.
  • Soften brie in a toaster oven or microwave 20-30 seconds.
  • Sprinkle softened brie with chopped walnuts and dates and drizzle with C&T Blackberry Balsamic.

Toasted Walnut Salted Maple Syrup Brittle

Salted Maple Toasted Walnut Brittle

No heavy corn syrup in this delicious brittle recipe! We swapped in pure maple syrup in its place for a rich, full-bodied sweetness that pairs beautifully with bitter walnuts and rich creamy butter. Top it off with a sprinkling of sea salt for an added crunch and yin to the sugar’s yang. Keep in an airtight bag or container for afternoon snacks or bundle in clear cellophane bags and tie with ribbon for gift giving.

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Equipment

  • Candy Thermometer Needs to be cooked to the "hard crack" stage, which is 300° F on a candy thermometer.

Ingredients

  • ¼ cup Real Maple Syrup
  • 1 cup Granulated White Sugar
  • 1 cup Butter cut into chunks
  • ¼ cup Water
  • 2 cups Chopped Fresh Whole Walnuts toasted
  • Sea Salt sprinkle to taste

Instructions

  • NOTE: This is not an activity for children, nor should children be nearby. The mixture becomes extremely hot and can blister skin with just a small splash.

Toast Walnuts

  • Add walnuts to a dry skillet over medium-high heat.
  • Stir constantly until walnuts are fragrant and beginning to brown.
  • Immediately scoop from the skillet onto a plate to cool. Set aside.

Brittle

  • Line a baking sheet with parchment paper and set aside.
  • Place a heavy-bottomed saucepan over medium heat
  • Pour in maple syrup, white sugar, butter, and water and stir until melted and creamy.
  • Once the mixture comes to a boil, discontinue stirring. May gently swirl the mixture in the pan if needed.  
  • Attach a candy thermometer to the saucepan and continue to gently boil until the candy thermometer reaches 300°F or "hard crack" stage.
  • Immediately stir in walnuts until well coated.
  • Carefully pour the hot brittle mixture onto the prepared baking sheet. Use a wooden spoon to spread to a thin layer.
  • Sprinkle top with coarse sea salt and allow to cool completely. Break into large pieces and store in an airtight container.

Notes

For an extra punch, use Crickets & Tumbleweed Espresso Infused Sea Salt.

Grilled Peaches with Peach White Balsamic Vinegar

Summers are made for grilling, so why not throw some fruit on the grill for a quick and easy dessert. Grilling fruit brings out the sweetness, and these grilled peaches get an extra boost of flavor with our Crickets & Tumbleweed Peach White Balsamic Vinegar. Serve over ice cream for a super summer dessert sure to please!

Equipment

Ingredients

  • 3 fresh, ripe peaches not overly ripe
  • C&T Arbequina 100% Extra Virgin Olive Oil
  • C&T Peach White Balsamic Vinegar or white balsamic vinegar

Instructions

  • Rinse, dry, then slice the peaches in half, discarding the stone/pits.
  • Brush the peach halves on both sides with C&T Olive Oil and Peach White Balsamic Vinegar. 
  • Place the peaches cut-side down, on a hot grill. 
  • Cook approximately 4 minutes, until clear grill marks are visible.
  • Turn and cook another 3-4 minutes depending on ripeness.
  • Remove fruit from the grill and slice as desired.
  • Serve as a side with dinner or on yogurt or ice cream. Also tasty drizzled with honey. 

Notes

Pair with Cypher 2021 Ethereal White Rhone wine.

Fresh Fig & Espresso Sea Salt Fudgy Brownies

A twist on a standard dessert, this recipe is sure to make it top the top of your favorites list! A fudgy, gooey, rich-but-not-too-rich, fig-enhanced chocolate brownie... what's not to love!? Slightly under cook for a lava cake like center.
Pair with Dirt Candy late harvest zinfandel port.

Cook Time 35 minutes
Cool 10 minutes

Ingredients

  • ¾ cup all purpose flour
  • ½ cup cocoa powder
  • ½ tsp baking powder
  • cup granulated sugar
  • ½ cup unsalted butter melted cool to room temperature
  • 3 large eggs at room temperature
  • 1 tsp vanilla extract
  • ½ cup chopped bittersweet chocolate
  • 12 ounces fresh figs sliced into ¼-inch rounds
  • C&T Espresso Sea Salt for sprinkling on top

Instructions

  • Preheat the oven to 350°F. Grease 8-inch square pan and line bottom with parchment paper.
  • Sift together the flour, cocoa powder, baking powder, and salt together in medium bowl.
  • In separate bowl mix sugar & butter, followed by eggs and vanilla, on medium high for 2 minutes.
  • Fold in flour mixture, followed by chopped chocolate. Careful not to over stir.
  • Pour batter into the prepared pan. Smooth top and sprinkle C&T Espresso Sea Salt.
  • Arrange the sliced figs on top in a decorative pattern.
  • Bake until the brownie is just about set, but still wiggly in the center, 30 to 35 minutes.
  • Let brownie sit for 10 minutes in pan before transferring to cooling rack.
  • Carefully slice brownie to desired size. Center will remain soft like lava cake.
  • Serve warm with vanilla gelato.

Notes

Store in air-tight container for up to 5 days at room temperature.
