Wine Country Olive Tapenade

This sweet and savory olive tapenade will definitely become one of your go-to recipes! Ingredients

  • 2 tbsp Crickets & Tumbleweed Blood Orange Olive Oil or regular olive oil
  • 1 tbsp Shallot minced
  • 1 tsp Fresh Rosemary minced
  • 1 cup Dried figs stemmed and quartered
  • ¼ cup Sugar
  • ½ cup Crickets &Tumbleweed Fig Balsamic or regular balsamic vinegar
  • 2 tbsp Whole-grain mustard
  • 1 tbsp Orange zest freshly grated
  • ¼ tsp Pepper freshly grated
  • cup Green and black California olives chopped and pitted

Instructions

  • Heat C&T Blood Orange Olive Oil in a medium saucepan over medium heat.
  • Add minced shallots and rosemary. Cook until fragrant and shallots are translucent, 1-2 minutes. 
  • Add the dried figs, sugar, C&T Fig Balsamic, mustard, orange zest, and pepper.
  • Reduce heat and simmer until the figs have softened and the mixture becomes jammy, about 8-10 minutes. 
  • Remove from heat and stir in the olives.
  • Pour mixture into a glass container and cool.

Notes

Keep olive tapenade stored in a covered container in the fridge and it will stay fresh for up to 1 week. Although, it would be impressive if you managed to make it last that long. It's way too tempting and delicious!

Ingredients

  • 1 wedge Brie either double or triple cream
  • ¼ cup Chopped Whole Fresh Walnuts
  • ¼ cup Chopped Dates
  • Crickets and Tumbleweed (C&T) Blackberry Balsamic

Instructions

  • Cut the rind off of the top of the brie wedge.
  • Soften brie in a toaster oven or microwave 20-30 seconds.
  • Sprinkle softened brie with chopped walnuts and dates and drizzle with C&T Blackberry Balsamic.

Grilled Peaches with Peach White Balsamic Vinegar

Summers are made for grilling, so why not throw some fruit on the grill for a quick and easy dessert. Grilling fruit brings out the sweetness, and these grilled peaches get an extra boost of flavor with our Crickets & Tumbleweed Peach White Balsamic Vinegar. Serve over ice cream for a super summer dessert sure to please!

Equipment

Ingredients

  • 3 fresh, ripe peaches not overly ripe
  • C&T Arbequina 100% Extra Virgin Olive Oil
  • C&T Peach White Balsamic Vinegar or white balsamic vinegar

Instructions

  • Rinse, dry, then slice the peaches in half, discarding the stone/pits.
  • Brush the peach halves on both sides with C&T Olive Oil and Peach White Balsamic Vinegar. 
  • Place the peaches cut-side down, on a hot grill. 
  • Cook approximately 4 minutes, until clear grill marks are visible.
  • Turn and cook another 3-4 minutes depending on ripeness.
  • Remove fruit from the grill and slice as desired.
  • Serve as a side with dinner or on yogurt or ice cream. Also tasty drizzled with honey. 

Notes

Pair with Cypher 2021 Ethereal White Rhone wine.

Irresistible Miso-Glazed Roasted Pumpkin

Put a new twist on a classic fall recipe with this sweet and savory recipe! The crunchy fried chilies, shallots and garlic give flavor and texture, while the saltiness of miso accentuates the natural sweetness of the soft, sweet roasted fresh pumpkin. This easy to prepare fall delicacy serves well as an appetizer or side dish. Enjoy!

Ingredients

Ingredients

  • 2 small pumpkins Cut into thick wedges
  • 1/3 cup olive oil
  • sea salt To taste

Glaze

  • 1/2 cup rice vinegar
  • 6 tbsp honey
  • 6 tbsp red miso paste
  • 2 tbsp sesame oil

Garnish

  • 3 red chilies finely sliced
  • 2 shallots peeled and finely sliced
  • 1 cup vegetable oil
  • 6 garlic cloves peeled and sliced

Instructions

Roasting Pumpkin

  • Preheat the oven to 425ºF.
  • Place pumpkin wedges in a large mixing bowl and toss with olive oil to coat.
  • Transfer wedges to a roasting tray and arrange in a single layer. Salt to taste.
  • Roast for 15 minutes, turn, then roast for an additional 15 minutes, or until soft and caramelized.

Preparing Glaze

  • Combine all ingredients in a small saucepan.
  • Bring to the boil and cook for 3–4 minutes until slightly thickened.

Garnish

  • Pour oil in medium saucepan and heat on medium.
  • Toss in chilies and shallots and stir to coat.
  • Gently fry gently for 4-5 minutes, until the shallots turn golden at the edges
  • Add garlic and fry for another 5 minutes, stirring regularly, until garlic and shallots are golden all over.
  • Drain and transfer to paper towel lined plate. Salt to taste.

Serve

  • Arrange pumpkin wedges on large serving platter.
  • Drizzle all over with glaze and sprinkle garnish.

Notes

May use squash in place of pumpkin or a combination of both.

Sensational Savory & Sweet Prosciutto Wrapped Figs

Quick and easy no-fuss appetizer recipe that is sure to please both the savory and sweet tooth in all your guests.

Ingredients

  • 20 Large Fresh Ripe Figs
  • 8 ounces Thinly Sliced Italian prosciutto
  • 1/4 cup Balsamic Vinegar

Instructions

  • Cut figs in half.
  • Dip cut side in balsamic vinegar.
  • Wrap fig half in prosciutto and hold together with a toothpick.
  • Grill until the prosciutto is slightly crispy and the fig is warmed to gooey perfection.
  • Remove from grill and cool for 5 minutes before serving.

Notes

Instead of grilling, you can also roast the figs in a preheated 450 degree oven until the prosciutto is crispy, 8 to 10 minutes. Remove from oven and cool for 5 minutes before serving.

BBQ Cauliflower Pizza

Amazing gluten free alternative to traditional pizza crust. Cooked on the grill, the cauliflower crust provides a crunchy base to your favorite sauce and toppings.

Ingredients

Cauliflower Pizza Crust

  • 1 Head of Cauliflower
  • 1/2 cup Water
  • 1/2 tsp Salt
  • Dash of Pepper
  • 1/2 cup Ground Flax Seeds
  • 1 Large Egg

Optional Pizza Toppings

  • White Anchovies (Boquerones)
  • Power Greens
  • Arugula
  • Flat Italian Parsley - chopped
  • Shaved Parmesan
  • Figs Infused White Balsamic Vinegar
  • Balsamic Glaze

Instructions

  • Preheat grill to medium high.
  • Pre-fold four sheets of aluminum foil to approximately 6-8" wide. Spray with cooking oil.
  • Puree cauliflower in a food processor until finely ground. A good blender will also do the trick.
  • Cook ground cauliflower, water, and salt together in a skillet over medium-high heat until most of the water evaporates (5 to 6 minutes). Drain excess water of out pan. Should have about 1 1/2 cups cauliflower pulp.
  • Stir cauliflower, egg, salt, flax seeds, and pepper together in a bowl to form a soft dough.
  • Gather dough into a ball and place in the center of the prepared aluminum foil. Press dough into circle about 1/4-inch thick.
  • Place the crusts (with aluminum foil underneath) on a grill pan and put on the grill for about 20 minutes.
  • Check often as each grill is different and cook time will vary. The crust is done when it's golden brown and the moisture has left. Remove from grill.
  • Slide a metal spatula under crust to ensure the crust is not stuck to the aluminum foil. Cool and turn crust over before adding grilled peach salsa.
  • Place pizzas back on the grill for an additional 15-20 minutes.
  • Remove and add remaining optional ingredients.

Notes

* Check pizzas often so they don’t overcook.
