Homemade Sweet Potato Fries or Disks

Ingredients
- 1 large or 2 small sweet potatoes
- 2 teaspoons C&T extra-virgin olive oil
- 1 teaspoon Cricket's & Tumbleweed Health Kick spice blend
- 1/2 teaspoon chopped fresh parsley
- sea salt optional
Instructions
- Preheat oven or air fryer/toaster oven at 375 degrees F for 5 minutes.
- Cut the sweet potatoes into 1/4-1/2 inch wide sticks or slices.
- In a large bowl, add the cut sweet potatoes, olive oil, salt, and Health Kick powder. Toss to coat.
- Place the sweet potato pieces in a single layer on a pan or basket if using an air fryer.
- Air fry or bake for 10 minutes or until soft, if cooking in the oven flip pieces over after 5 minutes so both sides get crispy. You may need to cook for longer depending on the thickness of your pieces of sweet potato.
- Serve right away with garnish of parsley and your favorite dipping sauce
Notes
Put your own twist on this, you can cut your disks in a circle or an oval. You can also cook these on the grill or BBQ.
